I set up Fat Hen in 2007 to unite my two great loves; food and nature and to find a way of sharing this communion with other people.
For as long as I can remember I have wanted to spend my life immersed in the natural world.
I grew up in Hong Kong, England and Botswana and travelled the world as a child experiencing the awe inspiring beauty of nature in its many guises.
Alongside my love of nature I have always been interested in food. Growing up in three different countries I got to see the amazing diversity of global cuisine at a young age.
So, after dabbling in wild food for 10 years, I took the plunge and set up Fat Hen. For the first 12 months I supplied restaurants but after seeing all the seasons through, on my hands and knees, I realised that I wanted to be sharing this with other people.
I have found that I now have a much deeper relationship with the natural world, its seasons, rhythms and places. I feel intrinsically a part of the places I forage from and feel so energised by a life in meaningful contact with nature.
The result of this is that I am a better botanist for not studying botany but for living with the plants by using them for my table and for my medicine.
I have been teaching yoga and body based therapies for over 10 years. I am insured and registered as a Senior Yoga Teacher with Yoga Alliance Professionals. I mainly works with groups in a class or workshop setting as well as with privates clients from my home studio.
My work reaches out to a broad range of people including people suffering with physical ailments such as; physical tension, pain, general wear and tear, injury and mis-alignment, as well as working alongside clients suffering with mental health issues such as anxiety, stress, insomnia, depression, trauma… My therapeutic approach integrates many tools and resources which help aid the healing process for both the mind (Cognitive) & body (Somatic) in a profound way.
Hi, I'm Fleur, I have worn many cloaks in this life from 15 years in hospitality to 10 years in ecology and design to 8 years of transforming places and generating beauty. I have owned my own Indonesian restaurant, managed boutique hotels and worked with a renowned French wedding caterer. In this experience, I bring you a world of cuisine, A1 hosting and a whole load of attention to detail. As an ecological designer, I invite you to explore this area with a gentle appreciation for the local wildlife while encouraging you to forage responsibly to enjoy the fruits, vegetation and wonderful creatures we sustainably harvest.
Wow! Fantastic weekend guys! You were all so patient with me and my incessant questions, all the food was quite exceptional and has given me so much confidence to forage and cook and expand my repertoire! Thank you.

A most inspiring weekend. Wonderful hospitality, incredible food, ideas for a lifetime of good cooking. Thank you so much Caroline, Matt, Lilly and oh yes, Frank. And all your helper friends. We’ll be back for a refresher.

The ultimate recession-beating cookery course…it takes you out into the beautiful Cornish countryside and beaches, where you will pick everything from watercress and woodland mushrooms to filling baskets with seaweed. And after building up an appetite, in the evening there’s a gargantuan feast – prepared by professional chefs. Great, offbeat fun.
